Potlucks, game days, cozy fall gatherings with friends, Halloween, and even Thanksgiving β€” they’re all on our minds. To help with your menu planning, here are three delicious and incredibly easy fall-inspired recipes. We’ve got one appetizer, one veggie side, and one pumpkin-infused dessert that’s likely to become your most-requested recipe. Enjoy!

Plum-Apple Puff Pastry Appetizer

This beautiful puff pastry tart recipe is SO much simpler than it looks, which makes it ideal for impressing guests. It calls for only a handful of ingredients layered onto a sheet of puff pastry dough and can be baked using two different methods β€” as individual miniature tarts (pictured here) or a large, single tart. This particular version includes apples, plums, brie cheese, fresh thyme, pecans, and a drizzle of hot honey, but you can easily experiment with different fruits and cheeses depending on what you have on hand! Balsamic Roasted Butternut Squash and Brussels Sprouts

Another fancy-looking dish that comes together with few ingredients and even less effort is this balsamic-glazed butternut squash and Brussels sprouts dish. We recommend picking up both the sprouts and the squash pre-cut at the grocery store, which essentially reduces this recipe to seasoning, tossing, and roasting. The optional toppings really drive it home, though β€” we suggest pomegranate seeds and chopped pecans, but goat cheese is a fun addition, too! Get the recipe HERE.

Easy Pumpkin Chess Bars

Finally … dessert. This recipe requires more cook time than the previous two, but the prep is incredibly simple. This recipe is based on an easy method for classic chess bars, but it calls for pumpkin puree and pumpkin pie spices, resulting in the dreamiest bite of pumpkin-spiced HEAVEN. Be warned, though. Show up to a tailgate with these once, and you’ll be asked to bring them every time. (But they’re so easy, you won’t mind.) Get the recipe HERE.
